My family has made it like a million times with fish and shellfish. Just make sure the fish is extremely fresh and it will be good. Foodnetwork.com actually has a few good recipes for ceviche. I would suggest using snapper- it's pretty non-offensive and works very nicely.

I'm not so sure that i'd suggest that you start with mollusks, but if you do, consider shrimp or scallops, as opposed to something like octapus. It's a good way to ease you into eating ceviche.
